Cookie of the Week: I Give Up On This One

So they sounded good in theory.

Carmel Apple cookies.

Perfect for fall right?

I tried two different recipes. One two weeks ago, one today. Neither recipe worked. The caramel burned before the cookies were done. The caramel stuck to the pan even with no-stick cooking spray and parchment paper.

I say caramel baked into a cookie just isn’t a good idea.

I guess I should have taken photos of my disasters, but I was so frustrated I just scrapped the mess off the baking sheets and right into the garbage.

I made a brownie mix tonight to snack on instead. Easy, no fail.

Off to look for next week’s recipe.

  1. I don’t know about caramel APPLE cookies (for some reason they sound kind of yucky to me), but these cookies are to die for:

    Rolo Cookies
    Cream together:
    6 Tbsp butter or margarine
    1/3 cup shortening
    2/3 cup brown sugar
    1 egg

    Add:
    1 3/4 cup flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tsp vanilla

    Chill dough. Then roll a small scoopful into a ball in your hand, press a Rolo in the center and cover it with dough. Bake at 350 for 8-10 minutes.

    Melt chocolate chips for frosting on top.

    (You will need approx 6 pkgs of Rolos; there are 9 Rolos in a pkg.)

  3. I have an idea. I used to make those peanut butter cookies that have the hershey kisses in the center. I would bake the cookie first, and then push a hershey kiss down on the top immediately after they came out of the oven. So, what if you baked the apple cookies, and then put a caramel on top instead of baking it in the cookie? Just a thought.
